We all love bacon, but bacon is so misunderstood.  

We think bacon is unhealthy and consider it a “cheat” food.  True, most of the bacon in the grocery store is a product of the modern meat industry, is loaded with nitrates and preservatives, and is full of water to so that it weighs more and they can charge more money.  Anything resembling something healthy is incredibly expensive.  But, it doesn’t have to be that way…

This class will show you how to transform a fresh pork belly into the most delicious, nourishing, nitrate and preservative free bacon in your own home with simple steps and basic tools.  No smoker?  No problem.  We will also explain how to turn your grill into a simple smoker to get the job done.

During this class we will cover:

  • Sourcing fresh pork belly

  • Skinning and curing pork belly

  • Rinsing and smoking

  • Cooking bacon
